“One of my egg flights is inspired by another Canadian classic, the Caesar — a little bit of hot sauce, a little bit of clamato juice, fresh tomato, celery salt, Worcestershire, lemon zest, chopped pickles for punch, and a little celery and bacon garnish,” he says. “Another favourite of mine is incorporating the flavours of a classic Cubano sandwich into a deviled egg."

“I’m a big fan of curing egg yolks and turning them into a spread,” Basile adds. “It really opens up a whole new side of how versatile eggs can be — I think we’ll start seeing this trend show up more and more at home.”
