Walking into Revé on Mary Street in Niagara-on-the-Lake, the first thing that hits me is the warmth — literally.
The dining room is anchored by a striking open-flame hearth, the pulse of this farm-to-fire concept. It’s moody and intentional, designed around elements of earth, air and water, with a stunning hanging moss installation overhead.
Founders Nicole Pisarenko, chef Adriano Cappuzzello, Anna Kruusi and Kevin Gillingham have crafted a space that feels deeply personal. It’s not just dinner; it’s a narrative journey. Inspired by the concept of "unreasonable hospitality," the team creates an environment where you aren't just a guest — you’re part of the dream they’ve worked so hard to realize.

Revé: The menu
Chef Cappuzzello’s cooking is a love letter to his Sicilian heritage, translated through the terroir of Niagara.
During my visit, the seasonal 10-course tasting menu is a masterclass in balance, with every dish telling a story of time and place. The experience is rooted in the best local Canadian sources like Always June Organic Farm and Heatherbrae Farms, with the inspiration coming from Cappuzzello’s upbringing in Sicily.

If you can, snag a seat at the eight-seat "Timelapse" chef’s counter. You’ll watch the live fire transform simple local ingredients into art, as Cappuzzello injects personal touches. The standout is the Views From The Window, a seafood “spaghetti haystack" designed to resemble the bales of hay Cappuzzello viewed from the window of his childhood home in Sicily. The menu is perfectly paired with a wine journey that bridges the gap between Sicily and Niagara.

Cappuzzello’s resume is a tour of the world’s most prestigious kitchens, from the two-Michelin-starred Locanda Don Serafino in Ragusa, Italy to the legendary Fat Duck in Bray, England, and Langdon Hall here in Ontario. Yet it’s his collaboration with partners Pisarenko, Kruusi and Gillingham that makes Revé shine. Their collective vision has been a long time coming. The foursome dreamed of bringing back traditional hospitality in a modern way with some fresh twists, and that’s exactly what they’ve done.
