Ingredients
- 2 oz Tanqueray gin
- 1 oz lemon juice
- 1 oz raspberry syrup (see ingredients and recipe below)
- 1 whole egg white
- 1-2 oz club soda
- Raspberries or strawberries for garnish
Raspberry Syrup
- 500 mL raspberry jam with seeds (do not substitute with sugar-free or seedless jams)
- 250 mL sugar
- 600 mL water
Method
To make the raspberry syrup, add all ingredients into a small pot, and warm over medium heat until well combined, making sure to turn off the heat before the mixture boils. Let cool and strain the seeds out.
To make the cocktail, combine the first four ingredients in a shaker with one ice cube. Shake until you can't hear the ice cube rattling around. Add more ice and shake again. Strain over ice, add the Club Soda and garnish with raspberries or strawberries.
