Despite the city's recent sandwich craze, a handheld is not something I would normally jump at. But the Ace Hotel Toronto is always turning heads, from the allure of its gorgeous interior to the seasonal menu at Alder and the cocktails made by their internationally recognized bartender. I've also been mildly obsessed with the SeeYouSoon culinary trio ever since I tasted their cooking at a secret supper club in Toronto. They also went on to receive the foodism Rising Star ICON Award in 2024.

So, when I learned that SeeYouSoon had created a special sandwich for a limited-time pop-up at the Ace Hotel, I cancelled my afternoon, and raced over to the hotel. At first glance, the Filet-XO-Fish looks like any other sandwich, but biting into it — holy mother of Mary. I devour it in a non-verbal, animalistic state. Time stands still. The XO sauce is spicy and fragrant; the tartar is creamy and cooling. The brioche bun is as soft and sweet as a newborn baby. And the fish is so incredibly crispy on the outside, I think it has to be overcooked on the inside, but it's not. It's perfectly soft, flaky and (sorry) moist.

Run, don't walk to the Ace Hotel to get your hands on this sandwich before it disappears on August 24. You'll thank me later.
