Taking a minimalist approach to winemaking, the grapes are whole-bunch pressed then clarified through cold-settling. A portion of the wine is wild-fermented with indigenous yeasts to maintain purity and add natural texture and complexity. For four months, it's aged in stainless steel, before it arrives in your glass to catch the last light of the setting sun.
